Product Description
A traditional Japanese double-bevel Deba knife by Nao Yamamoto, featuring Shirogami #2 carbon steel, a rustic Kuro-uchi finish, and a substantial blade profile.
Built around the distinctive shape of a Japanese Deba, this knife combines traditional materials with a robust, purposeful design.
The blade is crafted from Shirogami #2 (White Paper Steel #2), a Japanese carbon steel prized for its ability to take a keen edge and its straightforward sharpening characteristics.
Its traditional Kuro-uchi finish gives the blade a dark, rustic appearance, creating a striking contrast with the exposed cutting edge.
Unlike a conventional single-bevel Deba, this knife features a double-bevel edge, offering a different cutting geometry while retaining the substantial proportions associated with traditional Japanese fish knives.
The thick blade profile makes it well suited for fish preparation, including cleaning, portioning, and filleting fish.
Measuring approximately 160mm in blade length and 295mm overall, the knife features a blade thickness of approximately 9mm with a gradual taper.
The natural wood handle adds warmth and a classic Japanese aesthetic, complementing the rugged character of the black-forged blade.
At approximately 291g, this Deba has a substantial feel that reflects its heavy-duty blade construction.
Shirogami #2 steel, a traditional Kuro-uchi finish, and the distinctive geometry of a double-bevel Deba — a compelling example of Japanese kitchen knife craftsmanship by Nao Yamamoto.
