 This Gyuto knife is the Japanese counterpart to the Western chef’s knife, designed for versatility across a wide range of ingredients including meat, vegetables, and fish.

Handcrafted by the renowned Kyoto forge Kanetaka Hamono, with over 400 years of tradition, this knife is made from premium VG10 Damascus-clad steel and finished with a flawless mirror polish. Each blade carries a distinctive Damascus pattern, combining refined artistry with outstanding durability and sharpness.

The blade measures 240mm, with a slim 2mm spine thickness, providing smooth and precise cutting performance. With an overall length of 393mm, a 140mm wooden handle, and a total weight of 185.5g, the knife is exceptionally well-balanced—lightweight yet stable. Its hardness reaches HRC 60–62, offering an ideal balance of razor-sharp edge retention and long-lasting strength.
